The gameplay follows the standard concept of the Lemmings subgenre of commanding a group of zombies that move on their own until you give them a command or evolve a zombie into a commander of their own. It falls within the Lemmings subgenre (Google it if you don't know it because I'm not explaining it), and I would say it is a pretty good iteration within the subgenre. Zombie Night Terror is a game where you control zombies with varying abilities with the goal of completing the goal of the respective level, whether that be killing every living being there or simply reaching the exit.
